Classic Recipe -- Prince of Wales Cake
FoodReference.com
I received several requests for the origin of the Prince of Wales Cake, and many readers emailed me with stories placing the origin sometime in the 1920's or 1930's. Please note that the Inglenook Cookbook (1906), (which is now on my website), has a recipe for Prince of Wales Cake. So it is at least as old as 1906.
White part: Take 1 cup of white sugar, 1/2 cup of butter, 1/2 cup of sweet milk, 2 cups of flour, whites of 4 eggs, 1 teaspoonful of baking powder.
Dark part: Take 1 cup of brown sugar, 1/2 cup of molasses, 1/2 cup of butter, 1/2 cup of sour milk, 2 cups of flour, yolks of 3 eggs, 1 teaspoonful of soda dissolved in the milk, 1 teaspoonful each of spices, 1 pound of raisins, and 1/2 pound of citron. A small amount of black pepper improves it. Bake in layers and put together with icing.

Spices in Price of Wales Cake
The recipe calls for 1 teaspoonful of each of the spices, but the spices are not listed, so how does one know what to use???
