Main Course: Baked Garlic Salmon
Juice of 3 lemons
6 - 8 cloves garlic, minced
1/4 cup olive oil
1/2 cup white wine, optional
1/4 cup fresh parsley, chopped
Salt and pepper to taste Combine lemon juice, garlic, olive oil, white wine, and parsley together. Place salmon in a lightly greased baking dish and pour mixture over salmon. Sprinkle with salt and pepper and bake at 350 degrees for 20 - 30 minutes or until fish is flaky. The Skinny: You can leave out the wine. Oriental Wild Rice Pilaf 1/4 cup vegetable oil
1 onion, chopped
1 cup Chinese cabbage, shredded
1 cup wild rice
1 cup white rice
4 cloves garlic, minced
2 cups chicken broth
1/4 cup sherry
Salt and pepper to taste Heat oil in a large saucepan and saute onion and cabbage for 5 minutes. Add rice, garlic, chicken broth, sherry and salt and pepper. Bring to a boil, reduce heat and simmer for 20 - 25 minutes or until all liquid is absorbed. The Skinny: Use fat free chicken broth.
