Tip: Potato Hollow Heart
National Gardening Association
Hollow heart is when potatoes have a hollow, rotten space in the
center. It's caused by fluctuating moisture levels as the tubers
develop. Next year mulch your potato patch with a 6-inch-deep layer of
hay or straw.

I've read that hollow potatoes can also be caused by a boron deficiency in the soil. Boron is a trace element and can added to the soil in several ways. Perhaps the cheapest and easiest method of adding boron is to purchase borax from the grocery store, mixing a tablespoon into a gallon of water and pouring it directly onto the soil surrounding the plants or planting area. As well fritted trace elements can be purchased by the box from your gardening center and added to the compost or garden soil directly. Remember to read the labels and follow the directions provided on the package as 'over doing it' can be a problem with trace elements.
