One quarter cup olive oil
1 large onion, chopped
One
quarter cup shallots, chopped
One half pound baby spinach,
chopped
1 8-oz. package cream cheese, softened
1 and one
half cups sour cream
1 clove garlic, minced
Salt and
pepper to taste
Heat olive oil in a skillet and saute onion and shallots, add spinach
and cook for several minutes. Place Spinach mixture in a glass bowl
and stir in cream cheese, sour cream, garlic, and salt and pepper.
Chill and serve with fresh vegetables, crackers, and/ or bread pieces.
The Skinny: Use low fat cream cheese and sour cream.
